The brain is the busiest, yet most undernourished organ in the body. Because, in addition to a constant demand for oxygen and glucose, the brain needs a array of amino acids and vitamins, most of which must come from the food you eat. The quality of brain function is dependent on neurotransmitters, the chemical language of the brain. Neurotransmitters come from amino acids that are the building blocks of protein. Epinephrine plays a central role in the short-term stress reaction. Acetylcholine, manufactured from vitamin B 12, is a neurotransmitter that controls activity in areas connected with attention, learning and memory. The brain's attentional state is controlled by the neurotransmitters dopamine and noradrenalin. Dopamine encourages a persistent, goal-centered state of mind whereas noradrenalin produces an outward-looking, vigilant state.
